Being from the Pacific Northwest, curry and seafood are a big part of my diet. This curry salmon is one of my favorites. It combines buttery, sweet and spicy flavors in a creamy coconut curry sauce. My good friend and cocktail connoisseur, @jared.fwd recently introduced me to French Rhum, specifically @rhumtroisrivieres. This rhum is special, because it uses pure sugar cane that is grown on shores South of the Martinique region of France. It has subtle briny notes from the salt water in the soil. Jared and I used tarragon for an unexpected herbal kick, and lime juice to compliment the bold rhum flavor.
