San José

This is basically a rum old fashioned. I muddled together a Cara Cara orange wheel and fresh tarragon with a sugar cube. Then, I threw in some angostura and orange bitters. Sipping this reminds me of being in the French Quarter of New Orleans while listening to classic jazz music by a street performer. I like how this cocktail is bitter and yet floral. Then that tarragon hits you right on the nose with the fresh scent of liquorish. This drink pairs well with any type of white fish. I would especially enjoy this drink with a golden brown halibut covered in a buttery white sauce.

The Goods:

2 oz dark rum

1 sprig tarragon

1 Cara Cara orange wheel

1 sugar cube

splash water

2 dashes orange bitters

1 dash angostura bitters

The Method:

  1. In a cocktail shaker, add rum, tarragon, orange wheel, sugar cube, and splash of water. Muddle together.

  2. Add orange bitters, angostura bitters, and ice cubes. Shake well for 10 seconds.

  3. Strain into a old fashioned glass with a fine mesh strainer.

  4. Add a sphere ice cube and garnish with a tarragon sprig.
